Berry and Coconut Ice Lollies

 

Ingredients

 

280g mixed strawberries, raspberries and blueberries
400ml can coconut milk
2tbsp honey, plus extra to taste

 

Method

 

1.    Hull the strawberries and place in  blender with the other berries.
2.    Add the coconut milk and honey  and whizz until smooth.
3.    Divide the mixture between lolly moulds and secure an upright stick in each.
4.    Freeze for at leat 4 hours, or overnight, until completely solid
5.    Dip the outside of the mould in hot water for a few seconds to release.

 


 

Cheesy Stars

 

Ingredients

 

450g Cheddar Cheese, grated
120g butter, softened
250g plain flour
Pinch of salt
A splash of water
A shaking of smoked paprika and parmesan cheese to sprinkle

 

Method

 

1.    Preheat the oven to 200 °c and grease or line two baking sheets.
2.    In a large bowl, stir the Cheddar and butter together until well mixed.  
3.    Add the flour and salt and stir well. The mixture should look like chunky breadcrumbs.  
4.    Add a splash of water and use your hands to pull the dough together.  The heat of your hands should make this a little easier.   If you need to, add a little more water.
5.    Sprinkle some flour on the work surface and put the lump of dough on top.  Roll it out until it is just under 1 cm thick.  
6.    Use a star-shaped cutter to stamp out the shapes, using up all the dough and re-rolling the scraps.  
7.    Place the stars on the baking sheets and sprinkle the paprika and parmesan over the top.  
8.    Pop in the oven for 10-12 minutes until they are golden brown.  
9.    Cool on a wire rack.

 


 

Kayden’s Minestrone Soup

 

Ingredients

 

2 tablespoons Olive Oil
1 carrot, peeled and finely diced
1 stick celery, finely diced
1 clove garlic, crushed
5 ripe tomatoes, seeded and roughly chopped
1 tablespoon tomato puree
4 pints vegetable or chicken stock
100g green cabbage, finely sliced
8 leaves fresh basil, torn into pieces
50g small pasta shapes
415g tin baked beans
Salt and Pepper to taste

 

Method

 

1.    Heat the Olive Oil in a large saucepan.  
2.    Add the carrot, celery, onion and garlic and sautē for 10 minutes, stirring occasionally.  
3.    Add the tomatoes, tomato puree and stock, bring to simmer.   
4.    Stir in the cabbage, basil, pasta and beans and simmer for 15 minutes until the cabbage and pasta are tender.  
5.    Season with salt and pepper.

 


 

Raw Chocolate Energy Balls

 

Ingredients

 

160g oats
60g sunflower seeds
160g dates soaked in orange juice
60g raisins
40g cocoa
Dessicated coconut to roll
Zest of 1 orange

 

Method

 

1.    Pour the oats and sunflower seeds into a food processor and blend until fine.
2.    Add the dates, raisins, orange zest and cocoa and blend into a rough paste.
3.    Roll the mixture into small balls and finish by rolling in the coconut.
